Pecan Salad with Red Apple Slices and Raisins
Finding a way to get more fruits and vegetables into your family-s diet can be challenging. Children tend to turn their noses up to things that are green or healthy. There are ways to mask healthy foods with great flavor combinations that everyone will love and may leave the kids asking for more.
A pecan apple salad is one healthy, great tasting salad that everyone will love. This salad is versatile enough that you can use your favorite type of lettuce. The main ingredients for the dressing include one half cup pecans, one quarter cup raisins and three cups of red eating apples chopped up.
To prepare the dressing you will need one quarter cup olive oil, two tablespoons of apple cider vinegar, two tablespoons of lemon juice, one half teaspoon of sugar and Worcestershire sauce and one quarter teaspoon of sea salt. You can also use one quarter cup of crumbled bleu cheese if you like it. The dressing is very easy to make. Combine all of the ingredients together in a leak-proof jar and shake to combine. Place the dressing in the refrigerator until you are ready to use.
On a salad plate combine the lettuce, pecans, raisins and apple chunks. Immediately before mealtime, shake the dressing once again, pour over the salad and toss lightly. This brightly colored fruit and nut salad is a delicious twist on plain greens.
